I never thought I would say this.
I love aubergines.
I have tried them stuffed and in Moussaka, but they have always been a little bit slimy and oily for my taste.
However I have just used this beauty in my Cambodian “Krung” Curry, and just cooked for 10 minutes in the aromatic sauce it was amazing.
Which is wonderful as I will be able to buy and use more of these beauties.
