The perfect red cabbage recipe...
- Red Cabbage - 1lg Shredded
- Olive oil - 2 tbsp
- Onion - 1 large, finely chopped
- Cooking Apple - 1 large, finally chopped
- Water - 5 tbsp
- Brown Sugar - 1 tbsp (heaped)
- Vinegar - 2 tbsp
- Salt - 1 tsp
- Black Pepper - To taste
This is so easy to cook.
Finely shred the cabbage, and finely chop the onion and apple.
Pop into a saucepan that has a good close fitting lid.
Add all of the other ingredients.
Stir and bring to the boil.
Reduce the temperature to the gentlest simmer.
Cook for 30 - 40 minutes, checking to make sure all of the water has not evaporated every 10 minutes. (Just a add a little more water if it looks a little dry.)
Serve and enjoy...
I found the recipe on a scrap of paper in one of my Mothers cookery books, cooking it brings back many childhood memories, I remember getting really excited when I could smell this cooking.
It is totally wonderful.
