On these cold, miserable and grey mid winter days, when it is getting dark so early in the afternoon I crave food that is both warming and wholesome, but which also reminds me of summer.
And this rainy day soup first the bill perfectly.
It was one of those days when the rain was falling and I just could not bring myself to go to the shops.
There was some garlic and an onion in the fridge, but lentils in the cupboard and so Rainy Day Soup was born.
I hope you like it as much as me, it takes only a few moments to make and the smoked paprika adds a wonderful flavour, it is my favourite soup at the moment, and is even better on sunny days!
This is a real store cupboard favourite, with smoked paprika and wholesome red lentils.
- Organic red lentils - 100g, rinsed well
- Tomato puree - 2tbsp (I use Bomba)
- Garlic - 2 - 3 cloves finely chopped
- Black Pepper - A good pinch
- Vegetable stock - 1 litre - I use Marigold organic stock
- Smoked Paprika - One and a half tsp
- sunflower oil - 1 Glug
Roughly chop and sauté the onion and garlic in the sunflower oil, being careful not to let the garlic catch, or it will be bitter.
Then add all of the other ingredients and simmer for 15 - 20 minutes.
Blend until silky and smooth.
Check seasoning and enjoy either in a bowl or a mug.
(Tip: if it has thickened too much just add a little boiling water, until it is right for you)
